The extremely good debate. Apple or pumpkin for fall? I truely like both, but tend to gravitate more toward apple, that is why I’m sharing these Apple Cinnamon Quinoa Breakfast Bowls before the first pumpkin recipe of the season. Don’t fear, the pumpkin is coming next week.

So, why quinoa as opposed to oatmeal for breakfast? There’s some reasons I decided to strive it out. firstly, every so often you just need to exchange up your habitual. Oatmeal is outstanding, but like everything eaten mechanically, every so often you simply want some thing a bit specific.

APPLE CINNAMON QUINOA BREAKFAST BOWLS

INGREDIENTS
QUINOA

  • 1/2 cup uncooked quinoa, rinsed and drained
  • 1 cup water
  • Pinch of salt

  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • 2 tablespoons maple syrup
  • 2 tablespoons milk (optional)

CINNAMON APPLES

  • 1 apple peeled and diced
  • 1 teaspoon melted coconut oil or butter
  • 2 teaspoons maple syrup
  • 1/4 teaspoon ground cinnamon

YOGURT

  • 1/2 cup plain non-fat Greek yogurt
  • 1 teaspoon maple syrup
  • 1/4 teaspoon ground cinnamon

OTHER INGREDIENTS

  • Toasted chopped pecans and toasted coconut flakes


INSTRUCTIONS

  1. In a small saucepan, deliver the quinoa, salt and water to a boil. as soon as boiling cover with a lid and reduce the heat to medium. cook for 12-15 mins or until the liquid is absorbed (drain remaining liquid if wanted. upload within the cinnamon, ginger, nutmeg, maple syrup and milk.
