GUACAMOLE CHICKEN SALAD RECIPE

INGREDIENTS
For the Guacamole Chicken Salad:

  • 2 large avocados, peeled and pitted
  • 3 garlic cloves, minced
  • 1/2 medium red onion, chopped finely
  • 1 jalapeno, chopped finely
  • 2 6 ounce chicken breasts, cooked and shredded
  • juice and zest of 1 lime
  • 1/2 tsp sea salt
  • freshly ground black pepper
  • 1/2 tsp cumin
  • optional: 1 tsp of Epicure’s guacamole dip mix


INSTRUCTIONS

  1. Location the avocados in a big bowl and mash up using a potato masher or fork.
  2. Upload in garlic cloves, onion, jalapeno, bird breasts and zest and juice of lime. Stir properly.
  3. Add in salt, pepper and cumin (and guacamole dip blend if the usage of) and stir another time.
  4. Place one huge scoop of salad onto a slice of gluten-loose bread and top with different slice for a sandwich or serve over veggies.
  5. Salad will keep for numerous days in refrigerator.
