A sprinkling of cilantro gave those road enchiladas a few extra taste.  To lead them to I dipped the tortillas into the enchilada sauce.  I used keep offered sauce but you could make your own with this recipe.   • 3/4 C beef broth

  • 1 Tbsp canola oil
  • 1 28 oz. can red enchilada suace
  • oil for frying
  • 1 C crumbled queso fresco
  • 1 C chopped cilantro
  • 16 corn tortillas I used the small 4" round ones
  • 3 C shredded chicken pork or other meat
  • 1 C chopped onion


  1. In a pan integrate enchilada suace, broth and honey. convey to a simmer and simmer for 20 mins or till sauce thickens enough to coat the back of a spoon.
  2. In a skillet, upload enough oil to cowl the lowest and heat to medium warmth.
  3. one after the other, dip tortillas into enchilada sauce, coating each aspects.
  4. vicinity tortilla into hot oil, prepare dinner for 30 or till lightly browned on one facet after which flip to prepare dinner other facet.
  5. add meat filling, cheese, cilantro and onion and fold tortilla in half.
  6. place in solid iron pan.
